We all know how busy and crazy school mornings can be! Make these breakfast burritos ahead of time for a quick “to go” option! I’ll give credit where credit is due – this is my daughter’s prep (and pictures) for her and her girls’ breakfasts before work and school. She did this once a month on a Saturday or Sunday. You can also have your kids help you and do it assembly line style.
The secret to a non-mushy burrito is to let all the fillings cool completely before assembling your burrito. Her fillings were as follows, but make them any way you’d like to your and their tastes:
Flour Burrito wraps
Scrambled eggs
Spanish Rice or Brown Rice
Breakfast Sausage or Chorizo crumbled into little bits
Bacon crumbled
Cheddar Cheese
Lay your burrito out and lay the fillings in the center. Make one fold over the fillings from the bottom, fold in the sides, then roll tightly. Place the rolled burrito on a cookie sheet or a big plate. When all are rolled, wrap individually in wax paper and then either plastic wrap or foil. Place in a freezer container or bag, and into the freezer they go.
No need to thaw! Remove foil/plastic wrap, leaving wax paper or, if you prefer, remove all freezer wrappings and wrap in a paper towel. Microwave for 1 minute, flip it over, and microwave another 45 seconds till heated through.
